Slow and Steady She Goes

Good morning to everyone!

Today is weigh-in day for me, and quite honestly, I was not expecting a good report. Weekends are a real challenge for me - I think because I'm out of the routine. It's easy for me to plan my meals during the week (especially when DH is traveling!) but the weekends are harder. However, I was pleasantly surprised to read the scale and see that I had lost another 1.1 pounds for a total loss in two weeks of 2.3 pounds. It's not much, but it's a start. I'm going to work on losing 2 more pounds (minimum) before Thanksgiving.

I may have already mentioned this but it;'s my turn to have the family here for Thanksgiving. So I will be cooking for 21 people. My plan is to have lots of fresh veggies and fat free dressing to nibble on as I cook and to eat with my meal. And I'm going to have as many healthy dishes as I can. But there are several traditional dishes that I have to cook: my Sausage Cornbread dressing, English Pea Casserole and Sweet Potato Casserole. But I'l l have fresh steamed green beans, and fresh squash to help balance out the meal. Desserts: who knows. I'l l probabvly purchase a sugar free apple pie and make a pumpkin pie. Anyway, I've got time to finalize m plans - but putting it down here has helped organize my plans.

Now I need to get motivated to get on the treadmill and ab stretcher. At 4AM in the morning, it not exactly the girst think on m mind.

Eat a cup of squash first, before any of the other foods. It's low calorie and will really help to fill you up so you won't be as likely to overeat. I did this last Thanksgiving and it really helped.

If you tend to nibble while cooking, have celery and carrot (and other raw vegetables) already cut and near you.

Just let me know if you don't want me telling you what to do anymore. :) I don't want to be "bossy" or sound like a "know-it-all".

I'll take all the advice I can get!
That's a great idea about the squash - I will definitely do that. And I have already planned to have some fresh veggies at hand while I'm cooking!

Any thoughts on a great dessert that I can serve and actually have a serving??

Have you considered adding Apple Salad to you menu? Or a cranberry relish? When we go out to eat at a cafeteria I get either one of these and pretend it's my dessert.

For a dessert-
How about a parfait made with non-fat yogurt? (If you are unlike me and will eat the stuff- I hate the texture!)

You could add fresh berries and a little bit of granola to it. If you want to be really daring- a small dollop of fat-free whipped topping.
